Okonimiyaki is a popular Japanese street food made with flour, shredded cabbage and proteins of choice. The name is derived from the word okonomi, meaning "what you like", and yaki meaning "cooked". This recipe is a vegan version!
Makes 7 servings
INGREDIENTS
Batter
1 cup all purpose flour
1 tsp baking powder
1 tsp salt
1 cup water
1 thinly shredded cabbage
2 chopped scallions
1 cup sliced mushrooms
Tonkatsu sauce
2 tbsp ketchup
1 tbsp soy sauce
1 tbsp sugar
For topping
Tonkatsu sauce
Vegan mayonnaise
Sliced green onions
Furikake or dried seaweed
METHOD
In a large mixing bowl add all purpose flour, baking powder, salt, water and whisk until smooth. Add cabbage, scallions and mushrooms to batter and mix until combined. Add additional flour and water if needed.
For tonkatsu sauce mix together ketchup, soy sauce, sugar and set aside.
Add a few spoonfuls of the batter to a medium-hot pan and shape it to form a circle. Flip when bottom is able to be released from pan and spread a thin layer of tonkatsu sauce on top. When cooked through transfer to a plate.
Finish with more drizzled tonkatsu sauce, vegan mayonnaise, fried garlic, scallions, and seaweed.
